After keeping a careful eye on the ripening process, the night harvest is carried out in the month of September to take advantage of the cooler temperatures which help to preserve the aromas. The grapes undergo cold maceration in order to accentuate the must's aromatic intensity, before controlled fermentation at low temperatures over a period of 18 days.

Tasting Notes
An attractive straw-yellow colour with greenish iridescences. Its nose offers everything that could be expected from the Verdejo variety: fennel, freshly mown hay and tropical fruits (pineapple and mango). On the palate it is buttery with a fine fruity finish and refreshing acidity.
